The traditional way of making this recipe is using pecorino romano cheese; but I suggest using half pecorino and half parmesan cheese instead. Whichever best suits your palate.

1 lb. spaghetti pasta
1 cup grated parmesan cheese

In a medium pot, fill with water and add the salt to cook your pasta, cook your pasta. Once the water has come to a rapid boil, add your pasta and stir it for about 2 minutes to prevent it from sticking. Cook pasta for about 10 minutes or until al dente.
Before straining it, reserve a cup of the pasta water.
